The Most Delicious Veggie Chopped Salad for Summer

The official start of summer is just a few days away, which is why I asked the amazing Barrett from ValleybrinkRoad.com to create a delicious veggie chopped salad for us!  I love how flavorful this salad is and, of course, also super healthy!

Veggie Chopped Salad

Serves 2
  • 1 baby romaine head, leaves chopped
  • 1/2 small head radicchio, leaves chopped
  • 1/2 can chickpeas, rinsed and drained
  • 4 small radishes, cleaned and diced
  • 1/2 zucchini, diced
  • 1 carrot, peeled and diced
  • 1/2 red onion, peeled and diced
  • 1 handful raw almonds
  • 1/2 cup feta, crumbled

Apple Cider Vinaigrette Dressing

  • 1 tbsp whole grain dijon mustard
  • 3 tbsp apple cider vinegar
  • 2 tbsp good-quality maple syrup
  • 1/2 cup olive oil
  • 1/2 lemon, juiced
  • Sea salt
  • Freshly ground black pepper

Separate your chopped veggies, chickpeas, almonds, and feta into two individual bowls. In a Tupperware or mason jar, place all the ingredients for the vinaigrette and shake to combine. Toss the chopped salads with the apple cider vinaigrette and enjoy!
