Sweet Treat: Mini Rainbow Sprinkle Donuts

I am not a huge donut person, but when I saw a recipe for these mini donuts, I couldn’t help but try making them. They are super cute and perfect for a bite size sweet snack or even to mix up the dessert tray at a party!

Ingredients for Donuts:

  • 1 1/2 c. all-purpose flour 
  • 3/4 tsp. baking powder 
  • 1/4 tsp. baking soda 
  • 1/8 tsp. salt 
  • 1/4 tsp. freshly grated nutmeg 
  • 1/4 c. buttermilk 
  • 1/4 c. whole milk 
  • 6 tbs. (3/4 stick) unsalted butter, at room temperature 
  • 1/2 c. granulated sugar 
  • 1 egg

For Glaze:

  • 1 c. confectioners’ sugar 
  • 1 1/2 tbs. whole milk 
  • Rainbow sprinkles or any kind of sprinkles you like

1. Preheat oven to 350 degrees. Butter the wells of the mini donut pan.

2. Mix together the flour, baking powder, baking soda, salt and nutmeg. In a measuring cup stir together the buttermilk and the whole milk and set aside.

3. In a bowl with an electric mixer, beat together the butter and sugar on medium until fluffy (about 2 minutes). Add the egg and beat on medium or until combined.

4. Put the mixing speed on low and add the flour mixture in three additions, alternating with the milk mixture. Beat until combined.

5. Pour around 1 tablespoon of the batter into each donut hole on the pan and bake until a toothpick inserted comes out clean (about 8-10 minutes). Make sure to rotate the pan halfway through the time to make sure all the donuts get equal heat.

6. Take out of oven and let cool for 5 minutes and then flip pan over on a cooling rack and let donuts cool. Repeat with the remaining dough.

7. While the donuts cool, make the glaze by whisking up the ingredients. When the donuts are cool dip them in the glaze and let them stand a cool. If you want to add sprinkles make sure to do this while the glaze is wet so they stick.

8. Let stand. Enjoy!
